Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sauté until translucent.
- Stir in turmeric and cook for another minute.
- Pour in chicken broth and bring to a simmer.
- Add shredded chicken, carrots, and celery; cook until vegetables are tender.
- Season with salt and pepper.
- Serve hot garnished with fresh parsley.

- You can substitute cooked turkey or shrimp for chicken.
- For a creamier texture, add coconut milk in the last few minutes.
