Ingredients

  • 2 ripe bananas, mashed
  • 1 cup grated carrots
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Optional: chopped nuts for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix mashed bananas, grated carrots, oil, eggs, and vanilla.
  3. In a separate bowl, whisk flour, baking soda, cinnamon, salt, sugars.
  4. Combine wet and dry ingredients, mix until just combined.
  5. Pour batter into the prepared loaf pan.
  6. Bake for 55-60 minutes or until a toothpick inserted comes out clean.
  7. Cool before adding optional glaze or topping with nuts.
