- 2 ripe bananas, mashed
- 1 cup grated carrots
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- Optional: chopped nuts for topping
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, mix mashed bananas, grated carrots, oil, eggs, and vanilla.
- In a separate bowl, whisk flour, baking soda, cinnamon, salt, sugars.
- Combine wet and dry ingredients, mix until just combined.
- Pour batter into the prepared loaf pan.
- Bake for 55-60 minutes or until a toothpick inserted comes out clean.
- Cool before adding optional glaze or topping with nuts.
Notes
- Stir in chopped nuts or raisins for added flavor.
- Store in an airtight container for up to 3 days.
