- 8 small flour or corn tortillas

Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, whisk eggs with cumin, salt, and pepper.
- Cook sausage and bell peppers in a skillet until browned.
- Add eggs to the skillet and scramble until fully cooked.
- Warm tortillas slightly, then spoon egg mixture onto each and roll up.
- Place rolled tortillas seam-side down in a baking dish.
- Top with salsa, cheese, and chopped cilantro.
- Bake for 20 minutes until cheese is melted and bubbly.
