- 8 oz spaghetti or fettuccine
- 2 cups sliced mushrooms
- 3 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions, drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add mushrooms and cook until browned.
- Add minced garlic and cook for 1 minute.
- Pour in heavy cream, bring to a simmer, then stir in Parmesan cheese until melted.
- Add cooked pasta and spinach, toss until combined and spinach is wilted.
- Season with salt and pepper, serve hot garnished with extra Parmesan.
Notes
- Use fresh spinach for best flavor.
- For a vegan version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
