- 1 lb ground beef
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 2 cups beef broth
- 2 tbsp Worcestershire sauce
- 1 tbsp fresh thyme
- 4 large potatoes
- 1/4 cup butter
- 1/4 cup milk
- 3 cloves garlic, minced
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F. In a large bowl, combine ground beef, bread crumbs, Parmesan, egg, salt, and pepper. Form into 1-inch meatballs.
- Heat olive oil in a skillet over medium heat. Brown the meatballs for 5-6 minutes until golden. Transfer to a baking dish.
- In the same skillet, add beef broth, Worcestershire sauce, and thyme. Bring to a simmer, pour over meatballs, and bake for 20 minutes.
- Meanwhile, peel and cut potatoes into chunks. Boil in salted water until tender, about 15 minutes.
- Drain potatoes and mash with butter, milk, garlic, salt, and pepper until smooth and creamy.
