- 4 large bell peppers
- 1 lb ground beef
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 can diced tomatoes (optional)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until softened.
- Add ground beef, cook until browned, then stir in cooked rice, diced tomatoes, salt, and pepper.
- Stuff the bell peppers with the beef mixture and place in a baking dish.
- Top with shredded cheese and bake for 25-30 minutes until peppers are tender and cheese is melted.
Notes
- You can add chopped vegetables like zucchini or mushrooms to the filling for extra flavor.
- Use any type of cheese you prefer for topping.
- Serve with a side salad for a complete meal.
