- 1 packet taco seasoning
- 1 cup salsa
- 8 small flour corn tortillas
- 1 cup shredded lettuce
- ½ cup diced tomatoes
- ½ cup shredded cheese (cheddar or Mexican blend)
- Optional toppings: sour cream, cilantro, lime wedges
Instructions
- Place chicken breasts in the crockpot and sprinkle with taco seasoning.
- Add salsa over the chicken and cook on low for 6 hours.
- Shred the cooked chicken with two forks and stir to combine with the salsa.
- Warm tortillas in a skillet or microwave.
- Fill tortillas with shredded chicken, then top with lettuce, tomatoes, cheese, and optional toppings.
Notes
- Adjust spice level with more or less taco seasoning.
- You can add sliced jalapenos for extra heat.
- Use whole wheat tortillas for a healthier option.
