A quick and easy summer pasta salad combining the sweetness of corn with fresh vegetables and a creamy dressing.

Ingredients

  • 8 oz cooked pasta (penne or rotini)
  • 1 cup fresh corn kernels (grilled or boiled)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheese (cotija or cheddar)
  • 1/4 cup chopped cilantro
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions; drain and rinse with cold water.
