Ingredients

- 8 oz cooked pasta (penne or rotini)
- 1 cup fresh corn kernels (grilled or boiled)
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded cheese (cotija or cheddar)
- 1/4 cup chopped cilantro
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions; drain and rinse with cold water.
- In a large bowl, combine cooked pasta, corn, cherry tomatoes, cheese, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, chili powder, salt, and pepper.
- Pour dressing over the pasta mixture and toss well.
- Serve immediately or chill for 30 minutes before serving.
Notes
- Can substitute feta cheese for a different flavor
- Great with grilled chicken for added protein
