- 4 cups dashi broth
- 1/2 cup sliced shiitake mushrooms
- 1/2 block tofu, cubed
- 2 green onions, chopped
- 1 tablespoon soy sauce
- 1 teaspoon mirin (optional)
- Salt to taste
Instructions
- Heat the dashi broth in a pot over medium heat.
- Add sliced mushrooms and cook for 3-4 minutes until tender.
- Stir in soy sauce, mirin, and salt to taste.
- Add tofu cubes and gently simmer for 2 more minutes.
- Remove from heat and garnish with chopped green onions before serving.
Notes
- Feel free to add sliced daikon or spinach for extra flavor and nutrition.
- This soup is best served hot and fresh.
