A classic, comforting vegetable beef soup made with tender beef chunks and fresh vegetables simmered in a flavorful broth.

Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, diced
  • 1 cup frozen peas
  • 4 cups beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides. Remove and set aside.
  2. In the same pot, sauté onions and garlic until fragrant. Add carrots, celery, and potatoes; cook for a few minutes.
  3. Return beef to the pot. Pour in beef broth, add thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer uncovered for 1.5 to 2 hours, until beef is tender and flavors meld.
  5. Add peas during the last 5 minutes. Adjust seasoning as needed. Serve hot.

Notes

  • For extra flavor, add a splash of Worcestershire sauce or a bay leaf during simmering.
