- 1 lb beef stew meat, cubed
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 potatoes, diced
- 1 cup frozen peas
- 4 cups beef broth
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides. Remove and set aside.
- In the same pot, sauté onions and garlic until fragrant. Add carrots, celery, and potatoes; cook for a few minutes.
- Return beef to the pot. Pour in beef broth, add thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer uncovered for 1.5 to 2 hours, until beef is tender and flavors meld.
- Add peas during the last 5 minutes. Adjust seasoning as needed. Serve hot.
Notes
- For extra flavor, add a splash of Worcestershire sauce or a bay leaf during simmering.
- Best served with crusty bread or dinner rolls.
